Instructions
1. | Marinate the chicken with the Basic Marinade (Dark) for 15 minutes |
2. | Prepare the Chili Pepper Sauce. |
3. | Mix the marinated chicken with 1 tbs. of yam starch. |
4. | Place 2 tbs. of oil and chicken in a heated non-stick pan; cook over medium heat until 80% done and golden brown on the surface. Tile the pan so the chicken is soaked in the oil. Transfer the chicken onto a strainer to drain out excessive oil. |
5. | Add part A from the Chili Pepper Sauce to the same pan; sauté until aromatic. |
6. | Add part B from the Chili Pepper Sauce and chicken; cook over medium heat until the sauce is thick and the chicken is done. |

1. | 雞肉與基本醃料(濃)拌勻醃15分鐘。 |
2. | 準備辣子醬汁。 |
3. | 雞肉與1大匙地瓜拌勻。 |
4. | 不沾鍋燒熱後加入2大匙油和雞肉用中火煎到表面金黃(8分熟),將鍋子略為傾斜所以雞肉可以浸在油裡。盛出雞肉放在濾網過濾掉多餘的油水。 |
5. | 原鍋放進辣子醬汁A料用中火爆香。 |
6. | 加入辣子醬汁B料和雞肉,用中火翻炒到醬汁變稠雞肉全熟即可起鍋。 |
